This is lunch for day 1 of the purification days during the Conscious Cleanse. The last two days of the cleanse are liquids only- made with fresh fruits and vegetables and a max of 2T healthy oils. I use olive and coconut. I am starting this on day 11 since day 13 will have to include a meal (friends visiting :)). This is going to be challenging, but I hope to have a detoxified system and fewer cravings when it’s over! This raw soup was inspired by fresh carrots and apples from the Farmer’s Market- and to switch up the usual green smoothies (which I will have plenty of on these days)! I call this a soup rather than a smoothie because it is still in more of a puree form- not a juice- so that I can include the apple peel and all of the healthy fiber. Say hello to lunch.
raw carrot and apple soup:
- two large carrots, peeled
- 1 large apple, cored and sliced
- 1-2 celery stalks
- juice from one lime
- 1 T fresh cilantro
- 2 slices fresh ginger
- 2 cups filtered water
Combine all ingredients in blender, blend until smooth. Makes one quart.
