spiked zucchini hummus

Day 3 of the Conscious Cleanse .  I am definitely feeling better today.  The caffeine withdrawal headache is gone, and I am beginning to have more energy. Veggies are very filling and have already reduced some of my cravings. As a way to sneak more vegetables into what I eat, I decided to create a variation on traditional hummus with a kick.  Hummus is a great snack high in fiber and protein, and with raw veggies can really eliminate afternoon hunger.  This will be a great snack for me this week!




spiked zucchini hummus:

  • 1/2 cup dry garbanzo beans
  • 1 small or medium zucchini
  • juice from 1/2 lemon
  • 1 t olive oil
  • 2 T tahini
  • 1 t cayenne pepper
  • 1 t smoked paprika
  • 1/2 sea salt
  • 1-2 large garlic cloves
  • 2-4 T water

Soak beans overnight.  Drain and rinse and cook in plenty of water for one hour.  Drain and rinse.  Chop zucchini into slices and mince garlic. Combine all ingredients in food processor- blend until creamy.  Add small amounts of water during blending to reach desired consistency.
