I joined my first CSA/ farm share this week. I am excited for this to start in June!  My pick up is right next store, which also provides a great opportunity for volunteering.  In addition to distributing farm shares from a small community farm on Long Island, Georgia’s Place, which helps to manage the share distribution, provides housing for the formerly homeless and mentally ill.  The produce a rooftop garden and provide programs about nutrition and healthy eating.  I am hoping to begin my own rooftop garden soon, and look forward to helping out here as well!

I make this dish for a healthy work day lunch.  The parsnips have so much flavor and make the dish taste incredibly fresh and satisfying. Lentils are wonderful because they are packed with protein and fiber and do not require overnight soaking.

  • 1 cup green lentils, rinsed
  • 3 cups low sodium vegetable broth
  • 1 stalk celery
  • 2 carrots
  • 2 parsnips
  • 3 fresh garlic cloves
  • 1/2 small onion
  • 1 t olive oil
  • 1 t sea salt
  • 1 t freshly ground black pepper
  • 1/ 2 t cumin
  • 1/2 t tarragon
  • 1/2 t coriander
  • 1/2 t turmeric
  • 1/2 t cayenne pepper

Add lentils to saucepan with 2 cups of water.  Simmer until water is absorbed- about 20 minutes.  Meanwhile, dice all vegetables and mince garlic.  Sautee onion and garlic in olive oil for 3-4 minutes.  Add garlic, onions and spices to lentils with vegetable broth- mix thoroughly.  Add remaining vegetables and simmer, covered about 25 minutes until vegetables are cooked and most of the broth is absorbed.
