I am addicted to oatmeal.  I love the thick texture- especially when you don’t overwater it.  And I love cinnamon.  In the mornings, one bowl of oatmeal and some fruit get me through the first part of the day quite well.

But in the evening, I somehow lose my self control– over oatmeal!

For variation, I tried turning my oatmeal habit into a different treat with a few additives that do not normally make it into the bowl. I made just one large cookie- well, one at a time.  Vegan, healthy fats, and whole grain.

Friends, lock up your oatmeal!

giant oatmeal raisin cookie:

  • 1/4 cup almond meal
  • 1/4 cup old fashioned rolled oats
  • 1 t melted coconut oil
  • 1 T maple syrup (optional)
  • 1 t cinnamon
  • 1/2 t baking soda
  • 1 mini flax egg (1 t flax meal + 3 t water- whisked and set in fridge for 10 minutes)
  • 1/8 cup raisins (soaked in water for at least 10 minutes then drained)

Preheat oven to 350. Line baking sheet with a small piece of parchment. Combine wet ingredients in one small bowl.  Whisk dry ingredients in another small bowl.  Combine all ingredients including raisins- dough will be thick.  Spoon dough onto parchment and flatten into cookie shape. Bake  for about 12-15 minutes.  Cool on wire rack for 5-10 minutes before eating.
