flourless vegan peanut butter cookies

While recovering from my finger injury (and to be honest, before the injury) I have been experimenting with different vegan cookie options trying to understand what needs to be present to make a vegan cookie look, taste, and feel like a non-vegan cookie.  I’m still working on it but this was a delicious attempt.  Very soft and creamy!

flourless vegan peanut butter cookies:

  • 1 cup natural, chunky peanut butter
  • 1/8 cup raw agave nectar
  • 1/8 cup maple syrup
  • 1/2 t vanilla extract
  • 1 flax egg (1 T flax seed meal + 3 T water- whisked and chilled in refrigerator for 15+ minutes)
  • 1 t baking soda

Preheat oven to 350.  Mix together all ingredients until smooth.  Drop spoonfuls on parchment-lined baking sheet. Leave one inch space between cookies. Press cookies lightly with fork. Bake for 10-12 minutes. Cool completely on rack.
