So delicious! Inspired by smitten kitchen, this savory salad is an easy and flavorful lunch idea.

smashed chickpea salad

  • 1/2 cup dry chickpeas
  • 1/4 cup diced onion
  • 2 minced garlic cloves
  • juice from 1/2 lemon
  • 2 T olive oil
  • 1 T chopped fresh basil
  • plenty of sea salt and black pepper

Soak beans overnight.  Rinse, drain and simmer for one hour.  Rinse beans and chill.  In small bowl, combine garlic, onion, lemon juice, olive oil, salt and pepper.  Allow to marinate for a few minutes. Add chickpeas to mixture and smash with fork into a chunky salad not puree.  Chill salad for several minutes.  Serve on toast.
