super simple chopped salad

Sometimes regular salad greens can be boring.  Sometimes they can be messy.  Sometimes I like to minimize this with a lot of chopping and tiny pieces of vegetables.

simple chopped salad:

  • 1 cup cauliflower
  • 1 cup carrots- orange and yellow
  • 1 cup brussels sprouts
  • 1/2 red onion
  • 1/2 cup raisins
  • 2 T olive oil
  • 2 T rice vinegar
  • 1 T balsamic vinegar
  • 1 T peeled and chopped fresh ginger
  • 2 T fresh parsley
  • sea salt and cracked pepper
  • juice from one lemon

Combine all vegetables into a food processor and process until diced.  Toss with vinegars, juice, oil, ginger, and raisins.  Serve chilled.
