fruit and nut quinoa granola

This is a great variation on traditional granola- super crunchy and delicious! I recommend using red or black quinoa for a prettier treat.





fruit and nut quinoa granola:

  • 2 cups rinsed, drained, quinoa
  • 1/2 cup raisins
  • 1/2 cup chopped raw walnuts
  • 1/4 cup sunflower seeds
  • 1 T cinnamon
  • 1 tsp nutmeg
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp sea salt
  • 2 T maple syrup
  • 2 T melted coconut oil
  • 1 T vanilla

Spread quinoa in a single layer on parchment lined baking sheet.  Bake at 225 for 20 mins to dry quinoa.  Combine wet ingredients.  Add dried quinoa to wet ingredients and stir to coat.  Mix in spices, seeds, and nuts.  Bake at 350 for 20 minutes.  Toss with raisins, spread on cooking sheet to cool completely. Serve with milk of choice or Greek yogurt.
