Comfort food on a cold day!  Anything with apples or oatmeal is always delicious to me!  This cake is minimally sweetened, wheat free, and vegan.  These squares are great for breakfast or great energy bites before a workout!

vegan apple oatmeal cake

  • 1 cup oat flour
  • 1/2 cup oat bran
  • 1/8 cup rolled oats
  • 1 Tb cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger powder
  • 1/2  tbs ground cloves
  • 2 Tb melted coconut oil
  • 2 Tb maple syrup
  • 1/2 almond milk
  • 1/2 cup applesauce
  • 1/2 chopped apple
  • 1/4 cup chopped walnuts

Combine dry ingredients in bowl.  In another bowl, mix oil, almond milk, maple syrup and applesauce.  Slowly mix dry ingredients into wet.  Add apples and walnuts to mix.  Add mix to 9″ pan prepared with cooking spray.  Sprinkle rolled oats on top.  Bake at 350 for 25 minutes.  Allow to cool completely.
