lavender & chamomile honey tea cakes


I love lavender in so many things- tea, soap, fragrance.  It can also be quite tasty in treats!  These cakes were inspired by Roost’s gluten free cakes.  Almond flour can result in a pretty dense baked good with a higher content of healthy fats.  I think rolled oats and oat flour would also be a great substitute for these cakes.


These cakes use my favorite tea as their main ingredient.


  • 2 cups almond meal
  • lavender and chamomile from two bags of Harney & Sons Yellow & Blue tea- or a tea combination of your choice.
  • 1/2 tsp dried lavender
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1/2 cup applesauce
  • 2 tbs olive oil

Preheat oven to 350. Lightly grease or line a 6 cup muffin tin.  Crush/ chop flowers from tea bags. Combine went ingredients in one bowl.  Combine dry ingredients in another bowl.  Slowly mix the dry ingredients into the wet.  Fill muffin cups and sprinkle lavender on top. Bake 25-30 minutes- serve warm with honey.

  2. These look delish! I’m sad that I’m out of that kind of tea. 😦 How do you like baking with almond flour? I’ve been interested in trying it!
